I'm Dieter, and my journey into homemade sausage making began in a way I never expected. It all started when my wife came home with a Thai sausage seasoning kit from a local Asian food shop. We had no meat grinder, no sausage stuffer and certainly no butcher's shop—just a simple plastic funnel, the handle of a wooden spoon and plenty of enthusiasm. Our first sausages were far from perfect, but they tasted fantastic, and that first batch sparked a passion that has stayed with me ever since.
Over the years I have experimented with countless recipes, explored sausage traditions from many different countries and refined methods that produce reliable results without requiring expensive commercial equipment.
Most you'll find on this website has been prepared, tested and photographed in my own kitchen using practical equipment that almost anyone can own. My goal has never been to recreate a professional butcher's shop, but to show that making exceptional sausages at home is both achievable and incredibly rewarding.
