Poached Cheese Bratwurst – Juicy Bratwurst with Cheddar

A juicy, gently seasoned bratwurst filled with cubes of cheddar cheese and gently poached for a tender texture. Make it with chicken thighs for a lighter version or pork shoulder for a more traditional, full-bodied bratwurst.

There is something particularly satisfying about cutting into a freshly cooked bratwurst and discovering little pockets of melted cheese inside.

This Poached Cheese Bratwurst combines a mild, finely balanced sausage mixture with generous pieces of cheddar, creating a juicy sausage where the cheese becomes part of every bite without overpowering the flavour of the meat.

My preferred version uses chicken thighs with pork back fat. Chicken provides a relatively mild base that allows the cheddar to stand out, while the back fat supplies the richness and succulence needed for a proper bratwurst texture. For those who prefer an all-pork sausage, pork shoulder and back fat make an equally good alternative with a slightly richer, more traditional character.

The seasoning is deliberately restrained. Black pepper, mace, allspice and paprika provide warmth and background flavour while allowing the meat and cheese to remain the stars of the recipe.

I use lactose-free cheddar, which gives us all the flavour and melting qualities we want while making the sausage suitable for our own kitchen. A good mature cheddar can be used instead if lactose isn't a concern. Whichever cheese you choose, a cheddar with plenty of flavour works particularly well because its character remains noticeable after poaching and subsequent browning.

After stuffing, the sausages are gently poached rather than cooked aggressively. This sets the sausage, helps retain moisture and produces a tender, juicy interior with pieces of cheese distributed throughout.

They can be enjoyed after poaching, but I particularly like them finished briefly on the grill or in a frying pan. The outside develops a beautiful golden colour while the inside warms through and the cheddar becomes wonderfully soft.

It's a simple combination—bratwurst and cheese—but sometimes the simple combinations are difficult to beat.

Recipe

A juicy poached cheese bratwurst made with chicken thighs and pork back fat, or alternatively pork shoulder and back fat. Mildly seasoned with black pepper, mace, allspice and paprika, the sausage contains a generous 250 g of cheddar per kilogram of meat and fat. Lactose-free cheddar is used in this version, although any good mature cheddar can be substituted. The sausages are gently poached for a tender texture and can then be browned on the grill or in a frying pan before serving.

Ingredients

Meat and Fat

  • 700 g Chicken Thighs — As Cicken sausage
  • 300 g Pork Back Fat — As Cicken sausage
  • 750 g Pork Shoulder — Alternative as pork sausage
  • 250 g Pork back fat — Alternative as pork sausage

Seasoning

  • 18 g Salt
  • 2 g Black pepper
  • 1.5 g Mace
  • 1 g All Spice
  • 1 g Paprika

Other

  • 250 g Lactose free cheddar — Alternative any good mature cheddar
  • 80 ml Ice water

Method

Preparation

  1. Cut the meat and pork back fat into pieces suitable for your meat grinder.
  2. Place the meat and fat in the freezer for 1 to 2 hours until it is well chilled but not frozen solid.
  3. Cut the cheese into about 5mm cubes and place also in the freezer.
  4. Combine all spices and mill to a fine powder.

Processing

  1. Grind the meat and fat through a 3 mm grinding plate.
  2. Distribute the milled spices evenly over the meat and mix thoroughly until the sausage mixture becomes smooth, sticky and develops a good protein bind.
  3. Fold in the cooled cheese cubes until they are evenly distributed.

Stuffing and Linking

  1. Fill the mixture into natural pork casings.
  2. Twist into links of your preferred length.

Finishing

  1. Heat water to 70–75°C.
  2. Poach gently for approximately 45 minutes or until the internal temperature reaches at least 72°C.
  3. Cool immediately in cold water.
  4. Hang the sausages until dry and refrigerate overnight before serving.

The cheese should be well chilled before folding it into the sausage mixture. Cold cheese stays firm during mixing, helping the cubes retain their shape and remain evenly distributed throughout the sausage. It also helps keep the overall sausage mixture cold, reducing the risk of fat smearing and producing distinct pockets of cheese in the finished bratwurst.

Cooking Notes

Poach at 72 - 75 deg C for about 13 min / cm sausage diameter or until inner target temperature is reached.

Resting and Cooling

Best served after resting 1 night in the fridge for flavor development.

Storage

After poaching up to 5 days in the fridge and vacuum sealed over 3 month in the freezer.

Serving Suggestions

These sausages are excellent grilled over charcoal, pan-fried or gently reheated after poaching. Serve with crusty bread, potato salad, roasted vegetables or your favorite mustard.
