Chorizo may be one of Spain's most recognisable sausages, but not every chorizo is the firm, dry-cured sausage many of us immediately picture.

Chorizo Fresco is the fresh version—a juicy pork sausage that's seasoned, stuffed and then cooked before eating, without the lengthy curing and drying process associated with traditional dry-cured chorizo.

Its most distinctive ingredient is pimentón, the paprika that's so closely associated with Spanish cooking. Sweet Spanish paprika provides the characteristic deep red colour and rich pepper flavour, while a smaller amount of smoked paprika introduces a gentle smoky note without overwhelming the sausage.

Garlic, black pepper and oregano complete the seasoning, but the final ingredient gives the sausage another distinctly Iberian character: dry red wine. It adds acidity, aroma and depth while bringing the spices together with the richness of the pork.

The combination of pork shoulder and pork belly naturally provides both lean meat and sufficient fat for a succulent sausage. Once cooked, the interior remains juicy while the paprika gives the meat its unmistakable warm reddish colour.

Chorizo Fresco is particularly good cooked over a hot grill, where the casing browns and the rendered pork fat carries the paprika, garlic and wine aromas. But it's equally at home in a frying pan, roasted in the oven or cut into pieces and cooked into beans, potatoes, rice and other rustic dishes.

A traditional-style fresh Spanish sausage made from pork shoulder and pork belly, seasoned generously with sweet Spanish pimentón, a little smoked paprika, garlic, black pepper and oregano. Dry red wine adds acidity and aromatic depth to the mixture. Unlike dry-cured chorizo, Chorizo Fresco isn't fermented or dried; it remains a fresh raw sausage that must be thoroughly cooked before eating. Grill, pan-fry or roast it, or use it to add rich paprika and garlic flavour to rustic Spanish dishes.

Ingredients

Meat and Fat

  • 700 g Pork Shoulder
  • 300 g Pork Back Fat

Seasoning

  • 22 g Nitrite Curing Salt (0.4 to 0.5% Sodium Nitrite)
  • 10 g Sweet Paprika
  • 5 g Smokey Paprika
  • 1 g Black Pepper
  • 4 g Chilli Flakes — Optional
  • 0.5 g Dried Oregano

Fresh Additions

  • 7 g Fresh Garlic

Liquids

  • 50 ml Dry Red Wine

Method

preparation

  1. Thoroughly chill the meat, fat and grinder components before beginning.
  2. Cut the pork shoulder and pork belly into suitable grinding cubes.
  3. Mince the garlic with a little salt.
  4. Add the Paprika and the Garlic to the cut meat and distribute evenly. Make sure all the meat and fat is covered with the paprika - garlic mix.
  5. Place the meat into the freezer until very firm but not frozen solid.

  1. Grind the meat through a 6–8 mm plate.
  2. Add the remaining spices, the salt and start mixing.
  3. Add the red wine gradually while mixing.
  4. Mix until a firm protein bind develops and the sausage mixture becomes sticky and cohesive.

  1. Stuff into prepared pork casings.
  2. Twist into links approximately 15–20 cm long.

  1. Refrigerate overnight to allow the flavours to develop.
