Thai-inspired sausage brings a completely different character to the home sausage maker's repertoire. Instead of relying primarily on dried spices, its flavour is built around the fresh, vibrant aromatics that make Southeast Asian cooking so distinctive.

Fragrant herbs, fresh garlic, warming curry spices and the savoury depth of fish sauce combine to produce a sausage that is bold and aromatic without losing the flavour of the meat itself. But perhaps its most unusual ingredient is sticky rice.

The rice does more than add substance. Incorporated into the sausage mixture, it contributes a distinctive, slightly rustic texture and helps make this sausage quite different from the bratwursts and other European-style sausages many home sausage makers are familiar with.

Another important part of this recipe is patience. Once the sausages have been stuffed, allowing them to rest overnight in the refrigerator gives the herbs, spices and aromatics time to develop and come together. By the following day, the flavour is noticeably more rounded and complex.

Cooked over the barbecue until beautifully browned, these sausages are juicy, intensely aromatic and full of Southeast Asian character. They're an excellent example of just how diverse sausage making can be—and a delicious change when you want something far removed from the familiar flavours of a traditional bratwurst.

Lemongrass, ginger, galangal, garlic, Thai lime leaves, red curry paste and fish sauce create layers of fresh, aromatic Southeast Asian flavour. Rested overnight before cooking, the flavours develop beautifully before the sausages are grilled until browned and fragrant.

Ingredients

  • 1200 g boneless chicken thighs

  • 200 g Pork Back Fat

Other

  • 600 6 fresh boiled glutinous rice (sticky rice) — Cooled down just below 12 deg. C.
  • 6 tbsp Red Curry Paste (Thai)
  • 10 tbsp Fish Sauce

Fresh Additions

  • 18 cloves Fresh garlic — finely chopped
  • 12 cm Fresh Ginger — finely chopped
  • 12 cm Fresh Galangal — finely chopped
  • 12 stalks Lemongrass — finely chopped
  • 12 pcs Spring Onions — White part finely chopped, green part sliced separately

Fresh addition

  • 6 pcs Thai lime leaves — finely chopped

Method

Preparation

  1. Cut meat and pork fat into cubes suitable for your grinder.
  2. Add to the cut meat curry paste, garlic, ginger, galangal, lemongrass, lime leaves and the white part of the spring onions.
  3. Mix thoroughly until the meat is evenly coated and everything is evenly distributed. The curry paste should cover all surfaces well.
  4. Place the prepared meat mixture into the freezer for approximately 1–2 hours. The meat should be firm but not frozen solid.
  5. If you haven't done before, cook the rice and let it cool below 12 deg. C.

Processing

  1. Grind the chilled meat through a 3 or 5 mm plate.
  2. Add cooled sticky rice, fish sauce and sliced green spring onion tops.
  3. Mix thoroughly until the sausage mixture becomes sticky, cohesive, and evenly distributed.

Stuffing and Linking

  1. Stuff into prepared natural pork casings. Fill a bit loose since the rice expands a bit while on the BBQ later.
  2. Twist into links of about 10 cm.

Finishing

  1. Keep in the fridge over night for full flavor development.

Additional Guidance

Preparation Guidance

If you prefer, you can swap the chicken thighs with beef chuck or even pork shoulder. Thais keep the sausages hanging in the sun for a day before putting on the BBQ. (Honestly I prefer keeping them in the fridge).

Cooking Notes

Keep on the BBQ on medium to low heat so the dry out a little. Turn often so the brown all the way around.

Resting and Cooling

The sausage benefits from keeping them in the fridge over night for flavor development.

Storage

In the fridge up to 3 days vacuum sealed and frozen over 3 month.

Wonderful with: • sweet chilli sauce • fresh cucumber salad • pickled vegetables • jasmine rice • lime wedges • spicy dipping sauces

Additional Notes

I also got good results in an air fryer on medium heat.
