Pink Peppercorn & Brandy Chicken Liver Pâté

A smooth and buttery chicken liver pâté with the delicate fruity warmth of pink peppercorns and a splash of brandy. Some of the peppercorns are gently crushed into the pâté while others are folded through at the end, adding bursts of flavour and beautiful pink-red colour.

Chicken liver pâté is wonderfully adaptable. Once you have the basic balance of liver, butter and seasoning right, small changes can give the finished pâté an entirely different character.

For this variation, the star is pink peppercorn.

Despite the name, pink peppercorns aren't true peppercorns like black, white or green pepper. Their flavour is much gentler, with a delicate peppery warmth accompanied by slightly sweet, fruity and aromatic notes. That makes them particularly well suited to the richness of chicken liver and butter.

Rather than grinding all of the pink peppercorns into the mixture, I like to use them in two stages. Most are lightly crushed and added towards the end of cooking, allowing their flavour to spread through the pâté without being cooked for too long. The remainder are kept mostly whole and gently folded through after blending.

This gives the finished pâté little pockets of pink pepper flavour as well as attractive flecks of colour when it's sliced or spread.

A splash of brandy adds warmth and depth, while shallot, garlic, thyme, nutmeg and just a touch of white pepper provide a restrained background. The idea isn't to surround the pink peppercorn with lots of competing spices—it should remain the distinctive feature of the pâté.

Finished with butter and a little unsweetened cream, the result is smooth, rich and luxurious but with a noticeably brighter character than a traditional chicken liver pâté.

Equipment Needed

Ingredients

Offal

  • 500 g Chicken Liver

Seasoning

  • 5 g Salt
  • 6 g Dried Pink Pepperkorns
  • 0.3 g White Pepper
  • 0.2 g Nutmeg
  • 0.2 g Dried Thyme
  • 1 pcs Bayleaf

Fresh Additions

  • 1 pcs Onion — Roughly chopped
  • 1 cloves Fresh Garlic — Finely chopped

Additional Ingredients

  • 250 g Unsalted Butter

Liquids

  • 60 ml Brandy
  • 50 ml Cream

Method

Preparation

  1. Prepare and combine all dry seasonings. For better distribution mill to fine powder.
  2. Drain the chicken liver from remaining blood, trim where needed and cut in to equal sized pieces.
  3. Split the Peppercorns in two equal batches. On half roughly crush, the other half keep whole.

Cooking

  1. Melt the butter in a frying pan.
  2. Gently fry the onions on medium heat until they start to get soft.
  3. Add the chicken liver and bayleaf.
  4. When the liver is about half way, add the crushed peppercorns and the milled dry spices.
  5. Soon as the liver is fully cooked, add the brandy and let it bubble for another 1 to 2 minutes.
  6. Remove the bayleaf.

Processing

  1. Remove from the heat and transfer the content from the frying pan into a mixing bowl or a food processor.
  2. Use a blender or a food processor to create a smooth and creamy paste.
  3. While processing add the cream and continue until everything is evenly distributed, smooth and creamy.

Finishing

  1. Let it cool for 15 to 20 minutes and fold in the remaining pink peppercorns.
  2. Transfer the pâté into loaf tins and let it cool until it can be refrigerated.
  3. Keep refrigerated until completely cooled through and settled before serving.

Additional Guidance

Resting and Cooling

Cover the pâté and refrigerate until completely cold and properly set.

Storage

Up to 5 days in the refrigerator. It should be ok for freezing but I personally never did it. It never lasted that long.

Serving Suggestions

Take the pâté from the refrigerator shortly before serving so it loses just enough of its chill to become beautifully spreadable. Serve it with toasted baguette, rustic bread or crisp toast. Something slightly sharp alongside it provides a particularly good contrast to the richness. Cornichons, pickled onions or a little fruit chutney all work very well. The result is a pâté that's unmistakably rich but not simply dominated by liver.

Additional Notes

Filling the Mould Spoon or pour the pâté into a small loaf tin, terrine dish or individual ramekins. Tap the container gently against the work surface to remove larger trapped air pockets and smooth the top. For longer refrigerated storage and an attractive traditional finish, the surface can be covered with a thin layer of clarified butter once the pâté has cooled.
